Spettro first welcomed its guests in December of 2023 in Poughkeepsie, NY, with big ideas and even bigger dreams. Gathering some of the greatest ambition, skills, and expertise wasn’t the only thing on our minds when we decided to take on this project.

Our founders sought to achieve more than simply opening another eatery; their vision was to forge a unique connection between the rich culinary heritage of Italy and the abundant resources of the Hudson Valley. We strive to artfully blend celebrated traditions with innovative culinary techniques, creating novel flavor profiles and contemporary interpretations of classic dishes.
